Mozzarita
offers the freshest Italian-style cheeses, following
years-long traditions brought directly by our proprietors
from Italy. Among the fresh, Italian cheese we offer
are Mozzarella Fior di Latte, Fior di Latte (smoked),
Ovolini, handmade Trecce Braid, handmade Nodini Knots,
Scamorza, fresh Ricotta, Ciliegine Cherry, Sfoglia di
Mozzarella, Bocconcini, Burrata, and Mozzarella di Bufala.
Mozzarita's
fiore di latte (cow's milk mozzarella), ricotta and
burrata start with pasteurized milk. Mozzarella is derived
from the verb mozzare, meaning to cut, as the large
mass of curd is cut into small pieces once the milk
is curdled using a citric acid and salt solution.
To
make the cheese, curds are added to hot whey (the liquids
from the drained curds) and stirred until the curds
melt and start to form a smooth, shiny mass.
